Root Veg Soup 

The only thing to have when you feel sluggish is soup. A perfect winter warmer you can drive it with homemade brien bread or a nice crusty roll. You can double the amount of veg and freeze it. Also you can swap the stock melt for home made stock or chicken bouillon. 

This is a thick soup and can be served as a chunky broth or as I prefer a smooth blended one perfect for dunking the crusty bread into. 
Ingredients 
A knob of butter

1 onion 

2 bay leaves 

2 sprigs of thyme 

Tsp fresh parsley 

Two sticks of celery 

Clove of garlic 

4 carrots

2 parsnips

2 medium potatoes 

Half a turnip 

Stock pot and 2 litres of boiling water
Method : Pop the celery onion garlic herbs and butter into big pot. Fry them gentle in the butter until the onions are translucent and soft.

Add the roughly chopped Veg and stock. Bring to the boil and simmer for 30 minutes. Blend. 
You can serve with cream or creme fraiche.
