
I am missing going out. Having a glass of wine with something saucy on the side. Fear not I have been formulating some nice food to accompany quarantine drinks. These have a little kick to them and you can switch out the seasoning to things like cajun , garlic and herb or keep them plainer for kids.
What you’ll need :
1.5 large chicken fillet per person
Buttermilk
1egg beaten
Peri Peri powder
Curry powder
Method
Cut the chicken in long chunky strips
Soak them for a few hours in buttermilk
Combine breadcrumbs and seasoning in a bowl
Once you’re ready to cook dip the chicken in the egg and coat in breadcrumbs
Panfry them for a minute on each side and place on a baking try. Finish in the oven for 15 mins at 180c
