7–10 Medjool dates (pitted) 2 scoops Optimum Nutrition Vanilla Crème protein powder 80g rolled oats 1–2 tbsp peanut butter (to taste) 1 tbsp maple syrup 50ml warm water (for soaking dates)
Toppings (optional but recommended):
Dark chocolate (melted) Chopped hazelnuts Chopped pecans Dark chocolate chips
Method
Soften the Dates Place the dates in a bowl and cover with warm water for 10–15 minutes until softened. Drain well. Blend the Base Add the softened dates, oats, protein powder, peanut butter, and maple syrup to a food processor. Blend until the mixture comes together into a sticky dough. Shape into Balls Using clean hands, scoop out portions of the mixture and roll into bite-sized balls. Place on a tray lined with parchment paper. Decorate & Set Drizzle or dip each ball in melted dark chocolate and sprinkle with chopped hazelnuts, pecans, or chocolate chips for added crunch. Chill & Enjoy Place the tray in the fridge for at least 30 minutes to firm up. Store in an airtight container in the fridge for up to a week.
